Paleo Cauliflower Tots

I recently made these cauliflower tots for the kids as a side to homemade, baked chicken tenders for dinner – sort of like a healthy version of chicken nuggets and tater tots.  I used almond flour instead of wheat flour to make them higher protein and Paleo (minus the cheese, which is optional).

Ingredients:

1 head of cauliflower

1/2 cup almond flour

1 egg

1/4 cup shredded cheese (optional)

1 tsp minced garlic

salt and pepper, for seasoning

First, chop the cauliflower, steam til cooked through, and strain it.  Then use a potato masher to mash it into small pieces.  Mix in the remaining ingredients.

Mold into tater tot sized pieces (mine turned out a little flatter).  Bake on a cookie sheet at 375 for about 20 minutes, flipping halfway through.
